You were playing a different chess variant yesterday, namely crazyhouse. In crazyhouse you can put back a captured piece of your opponent's as your own. Your opponent took a rook of yours and because you were playing crazyhouse he could put it back as a black rook. That was why he could have three rooks.
It must be hilarious to see someone playing crazyhouse when they thinking it's regular chess.
